Wholemeal flour comes from Wheat which is the most important grain in that it provides more nourishment for people throughout the world than any other food.  Wheat is used in a variety of products, but as flour for bread and baked goods is the most important.  It is suitable for making bread as it has high gluten content and this gives it its elasticity and strength and allows breads to rise.  After kneading, gluten traps the carbon dioxide produced by the yeast and the result is the rising of the dough.
